Italian Bread Crumb Tofu Tacos

I get so excited about tofu. It’s like fresh clay that is waiting to be molded. It can become anything.

Here we go:

My tofu was coated with italian bread crumbs and seasonings, seared in a pan with olive oil. I’m obsessed with corn tortillas also, so I tossed the tofu in with kale and tomatoes.  I made this dish with a side of roasted asparagus.

Light, yet filling.

Who says tofu can’t look and taste amazing?
